Field Level Security and Sales Order Transaction Entry

I would like to be able to sett up field level security for the Sales Transaction Entry Window and having difficulty in finding the field to block.    When a document is entered or selected, I would like to block the deletion of any document from the drop down Action Button.    I am able to block the entire 'Action' button, but I did not want to do the entire button.
